¡Fiesta!



This A.M. I am sharing my Spicy Queso recipe. But I got to thinking why just have Queso Dip when you can add salsa, guacamole, and a few more friends and have a whole fiesta? This will be the easiest and tastiest fiesta you have ever and will ever throw! Don't forget to buy a few bags of Tostitos scoops or your other favorite tortilla chips, cause you're gonna need em!
 

Guacamole

4 large ripe Hass avocado, peeled and pitted
Couple squirts of fresh lime juice
2 tablespoons chopped fresh cilantro
4 tablespoons finely chopped red onions
1 clove of garlic, finely minced
1/2 jalapeno pepper, seeded and finely chopped
1/2 tablespoon apple cider vinegar
Dash cayenne, smoked paprika (optional)
Sprinkle of sea salt

Mash up avocado with a fork and add the lime juice. Add all other ingredients and mix well.


Salsa

1 14 oz can whole tomatoes, drained
1 14 oz can diced tomatoes with green chilies (with the juices)
1/2 jalapeno pepper (seeds removed if you want your salsa milder)
1/2  yellow onion
1 teaspoon sea salt
1 teaspoon cumin
1/2 teaspoon sugar
lime juice from half of a lime
About 1/2 cup fresh cilantro

Place all ingredients in food processor and blend until combined.






Spicy Queso

32 oz box Velveeta cheese
30 oz can Hormel No Beans Chilli
1 cup of milk
Juice from 1 lime
4 tablespoons chili powder
4 tablespoons paprika
4 tablespoons cumin
Cayenne pepper to taste (I usually add 3 tablespoons)

Cut Velveeta up in to small chunks and put in a crock pot with all of the other ingredients on low heat for 4 hours. Stir halfway through and again before serving.

You can speed up the queso by combing everything in a sauce pan until the cheese is melted and then putting the dip in the crockpot to keep warm for the fiesta!
