Midnight Tortillas

This A.M. believe it or not, I was in my kitchen cooking! Earlier today, I took out some ground beef to make spaghetti for dinner and just after I cut up some onion, threw the ground beef into the pan, I realized I had nothing to make the tomato sauce. I had to think quickly because I was absolutely starving. Ground beef with onions was not looking too appetizing. After analyzing the contents in my fridge and cupboards this was the creation I was able to devour.

Chewy Flour Tortillas

2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vegetable oil
3/4 cup lukewarm milk

Ground Beef Filling
1 package of ground beef
1/2 onion chopped
1 teaspoon minced garlic
1 teaspoon paprika
1 teaspoon chilli powder
crushed chiles to taste
black pepper and chef salt to taste
red pepper sauce to taste
1/4 cup beef broth

Cucumber Mint Salad
2 english cucumbers diced
2 tablespoons fat free Miracle whip
1 tablespoon fresh mint leaves chopped
1 tablespoon fresh lime squeeze
salt and pepper to taste

3/4 cup of beef broth
1 teaspoon butter
1/2 pkg of Molé spice mix (see picture)

Grated Old Cheddar Cheese


Okay, so here is what I did: Prepare tortilla dough, Cook ground beef and ingredients, set aside, grate cheddar cheese, make cucumber salad.
Once tortillas are fully cooked its time for assembly.
1. Place cheese on warm tortilla,
2. Scoop ground beef
3. Top with cucumber salad
4. Drizzle with Molé
5. Garnish with mint leaf
6. Enjoy!
