Ames' Ultimate Homemade Burger

This A.M. its all about the burger baby!  This is the perfect time of year to grill and have a no fuss experience in the kitchen.  Burgers are easy to make yet they can be super chic!  This burger recipe I designed was inspired by a recent Toronto Life magazine article I read that highlighted the top 25 burgers in Toronto.  I knew I could make a comparable if not better ultimate homemade burger of my own and to make it even more interesting I thought I would put my girl Michelle to the challenge!
Suggested Serving~side with homemade sweet potato french fries
Beef patty seasoned with garlic and smoked paprika, topped with smoked gouda, caramelized onions, sweet Pickles, tomato, BBQ mayo, mixed greens and fresh baked buttered toasted kaiser.  

Smokey Beef Burger

Since, Michelle and I are having a contest on who can make the best ultimate burger, here it is my first entry!  A homemade ultimate 'comfort food'  burger.

BEWARE...This burger is super delicious.

Smokey Beef Patties-Serves 6
2 lbs ground beef
2 eggs
1/2 cup of fine bread crumbs
salt and Pepper
1 heaping teaspoon of minced garlic
1 teaspoon of smoked paprika
2 cooking onions
1 shallot
1 teaspoon of butter
1 teaspoon of olive oil
1/2 cup of white wine
1/4 cup pickle juice

2 tablespoons of chicken stock
salt and pepper
sliced smoked gouda cheese
mixed greens
bread & butter pickles
BBQ sauce
Kaiser buns

Combine ingredients in a large bowl

Use a potato masher to mix together, once thoroughly mixed form into balls the size of a tennis ball, press into 6 large patties on waxed paper or baking sheets.  Grill. 

Caramelized Onions Instructions
Slice onions thinly
Heat oil and butter, add onions and salt and pepper.
Cook onions until soft on medium heat  when they start to turn transparent  add shallots and chicken stock, when the chicken stock is reduced add wine and cover and reduce for 5 min, add pickle juice and cook until onions golden brown. 

Butter kaiser buns and toast in oven, layer burger, cheese , toppings and caramelized onions. Enjoy!
