Mackers' Ultimate Comfort Food Burger

This A.M. I have been cleaning the dishes and the kitchen because there was no way we were cleaning last night after dinner. I made my Ultimate Comfort Food Burger that sent Steve and I into a food coma the likes of which I have never seen before. We were sated, delirious and unmistakably  'fat and happy' after eating our half pound burgers slathered in BBQ sauce, cheese, bacon and a fried egg.



When it comes to making a comfort food burger, I am a purist. I don't like to mix the meat with anything, I simply shape my burgers and coat them in Lawry's seasoned salt. (Sometimes I use creole seasoning which is basically a spicy seasoned salt.) I then let them get to room temp for about 45 minutes before grilling them. My half pound burgers cooked for about 6 minutes per side. In the final minutes of cooking, once I started to see the juices bleed out of the top, I covered my burgers with grated extra sharp cheddar cheese. Back inside the kitchen, I added bacon slices, chopped parsley and a fried egg to each burger. Steve went with mayo and ketchup on his and I drenched mine in BBQ sauce, my favorite condiment. I served the burgers with a steakhouse style wedge salad; iceberg lettuce, a little blue cheese dressing, bacon bits and plenty of blue cheese crumbles.
