Naan Pizza

This A.M. I am coming to realize that sometimes the best dinners are unplanned, invented on a whim. There is a tropical storm out in the Gulf of Mexico named Debby and it has been raining all week. By Sunday everyone here in Tampa was bored out of their minds, so sick and tired of all the rain and I guess my buddies were bored too so they came by my house to hang out. We watched movies, chatted and after a couple of hours realized we had gotten hungry. Unprepared for their visit I scowered around the kitchen and decided I could throw together a little white pizza on naan bread. I had made pizzas on naan before but not one like this... It was filling but still light and tasted like something you would be served at a bistro.

Definitely a recipe that will be a keeper. I hope you love it as much as we did!


Mediterranean Naan Pizza

2 Naan Bread

olive oil
1 cup ricotta cheese
3/4 cup goat cheese
5 tablespoons fresh basil
1 teaspoon dry oregano
3 tablespoons minced garlic
pinch of sea salt, several turns of cracked pepper

1 lb ground chicken, seasoned with garlic salt and pan fried, drained
About 2 cups spinach
About 2 cups mozzarella cheese

Brush a little olive oil on your Naan bread and set it directly on the oven rack and let bake for about 5 minutes just to get the crust going a bit. Mix ricotta, goat cheese, basil, oregano, garlic, salt and pepper in a small bowl. Take Naan out of oven out and place on a parchment paper lined baking sheet. Spread cheese mixture on the Naan, then top with chicken and spinach, finishing it off with mozzarella cheese. Bake for 20 minutes or until cheese is brown and bubbly. Let cool for 10 minutes before slicing.
