Besides, if I ate healthy all the time my pants wouldn't have ripped along the butt seam Friday at work. I had to buy new pants halfway through my shift! Oh, you think that's bad? Also, a few days ago my Spanx split across my ass. Who busts Spanx? I thought the things were impervious to big booties? At this rate, I will be 300 lbs by the end of the year, modeling plus-size fashion for the blog and after another year I will have lost it all, the blog will be about healthy living, with almost all vegetarian recipes!
In the meantime, I am going to eat my BBQ leftovers and go split another pair of Spanx.
Mackers' BBQ Rub
1/2 cup brown sugar
2 tablespoons Lawry's salt
1 tablespoon garlic salt
1 tablespoon crushed red pepper
1 teaspoon black pepper
1 teaspoon paprika
Combine in a plastic bag, seal and shake well, set aside.
Heat oven to 375.
I bought 4 large chicken breast halves at my supermarket and rinced them and patted them dry.
Under the chicken skin put a couple tabs of butter and about a half tablespoon of BBQ rub. Spray the skin and the outside of the breasts with I can't believe it's not Butter! (Gotta cut back somewhere! But the spray butter really works nice to keep everything moist). Liberally coat chicken in the BBQ rub. Bake for 30 minutes at 375, coating with the spray butter again halfway through. Let chicken rest tented in tin foil while you put Mac and Cheese in the oven or finish other sides you may be making.
Mix 4 tablespoons of melted butter with 1/4 cup BBQ sauce. Brush about a half a tablespoon of the the mixture on each roll. Brush remaining mixture on chicken breasts. Put the rolls and chicken in the oven for 5 minutes to warm and then serve.
