This A.M. more than ever I am super excited to share this recipe I found. I have been doing a lot of research on healthy eating and reading articles about genetically modified food. To top it off I had the pleasure of meeting Michael Smith who spoke at Toronto's Word on the Street, Book and Magazine Festival. He spoke about healthy eating and our responsibility as parents to not feed our kids the processed junk we often fall back on in times of convenience. Well, more about Michael in my next post...I am here to share this brownie recipe that is made with organic coconut flour. This delicious and healthy alternative to wheat flour not only is made from certified organic coconuts, but is completely gluten free, high in fiber and is a great source of protein! Ok, before I bore with all the nutritional facts, I will say that these are the best brownies I have ever tasted. I was a skeptic about replacing flour in a brownie recipe, however, I am now experimenting with it and hope to share more amazing recipes in the future.

|Organic Coconut Flour|
|Brownie Batter topped with walnuts|
Guilty Pleasure Gluten Free Brownies
1/2 cup butter or margarine
1/2 cup of cocoa powder
6 eggs or equivalent substitute
1 cup of sugar
1 teaspoon vanilla
1/2 cup of organic coconut flour
1 cup of chocolate chips
1/2 cup chopped walnuts
Preheat oven 350 degrees
In saucepan (or microwave) melt butter and blend cocoa powder over low heat- set aside and let it cool.
In a bowl mix, eggs sugar and vanilla.
Blend into cocoa mixture.
stir in coconut flour until the mixture thickens and has no longer lumpy. Add chocolate chips. Pour into a square cake pan and sprinkle nuts if desired. Bake for 30-35 minutes. Enjoy!
