This A.M. if you have an avocado and a couple of eggs at your house you can try this recipe! Last night I combined two super foods, egg and avocado, for a light, yummy and easy dinner. Maybe it was because of the holiday weekend that we spent
gorging ourselves... but, last night Steve and I were in the mood for
something light for dinner. So I made this unique combination with a
side of sweet potato fries. It was exactly the meal we needed,
satisfying and not gut busting! The baked egg and avocado dish seemed
very versatile, I can imagine it being served for breakfast lunch or
dinner with different sides. What time of day will you try this easy
recipe?
Baked Egg and Avocado
Slice an avocado in half, scooping out a little meat from the center of each half to make room for the eggs. Set halves in a baking dish that has been lightly coated with vegetable oil. Drop an egg in the center of each avocado half, top with your favorite cheese (If you are counting calories, skip the cheese! It will still come out tasty...), a pinch of a fresh herb such as tarragon or parsley, sprinkle with salt, pepper and paprika and bake for 20 minutes at 425.
