This A.M. I thought I would cheer myself up with some pancakes. This week has been miserable with storm Sandy and its been a challenge to take my puppies, Usher and Khloé on regular walks with all the rain we have been experiencing. I've been cooped up in this house too long and thought why not make some fluffy blueberry pancakes... I love pancakes! I could eat them anytime of the day. Nothing is more delicious than light and fluffy buttery pancakes that are soft like clouds in the middle and crispy on the edges.
Ames Fluffy Blueberry Pancakes Recipe
1 cup of flour
2 tablespoons of white sugar
2 tablespoons vinegar
3/4 cup of milk
1 teaspoon baking powder
1 teaspoon of baking soda
1/2 teaspoon salt
For added flavour you can also add vanilla or cinnamon.
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Heat a large pan over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, sprinkle with blueberries. Then, cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Top with sliced bananas, or your favourite seasonal fruit serve with Canadian Maple Syrup. Enjoy!
