Thai Inspired Soup

This A.M. I will share with you a weeknight favorite at my house. A Thai inspired soup that is simple to put together yet tastes like you put some time into it.






Thai Inspired Soup with Shrimp and Noodles

32 oz chicken broth
3 tablespoons soy sauce
1 tablespoon curry powder
2 tablespoons coconut milk (optional)
1 teaspoon coriander
3 cloves finely minced garlic
About 15 medium shrimp, uncooked, peeled, devained and tails removed
8 ounces of your favorite Asian noodles
Sprouts and cilantro for garnish

In a medium sized pot saute the garlic with a dash of vegetable oil for about three minutes. Add the first six items to the pot, bring to a boil and then reduce the heat to simmer while you prepare the noodles as directed on package.  In a colander place the shrimp and when the noodles are done pour them over the shrimp (to cook the shrimp quickly and efficiently) and strain the water. Add noodles and shrimp to soup and serve, placing sprouts and fresh cilantro on top for a garnish packed with extra flavor.  Tip: If you love spice, a little sriracha is great addition at the end to give your soup an extra kick!

Serves 2 for dinner, or 4 for a starter
