On our first Christmas together Jill, my sisters Carolyn and Kristen and I all made a 3 ingredient peanut butter cookie recipe that Jill told us about. We rolled the cookies in sugar and put them in the oven. As cookie dough and peanut butter fanatics, my sisters and I shared the bowl with the left behind bits of batter, each licking off the spatula and egg beaters to savor every last ounce. One of my sisters, I think it was Carolyn, wisely suggested that next time we should make extra cookie dough so we could all enjoy more raw batter. When the cookies were done we quickly stuck chocolate kisses in each center. Our cookies were pretty and tasted just as good as 10-15 ingredient cookies that looked identical to ours. I was amazed.
Now every Christmas, I make the 3 ingredient peanut butter cookies and think fondly back to that day. It also reminds me that divorce isn't always a bad thing. My parents are both happily remarried and I have twice the family to love and be loved by.... especially during the holidays.
Peanut Butter Cookies
2 cups sugar
2 cups peanut butter
24 Hershey kisses
1 cup sugar for rolling
Mix first 3 ingredients. Roll cookies in to 24 balls and lightly roll each ball into sugar. Bake at 375 for about 8 minutes or until lightly browned. Push Hershey kisses immediately into the center of each cookie, the edges of the cookie will crack a little. Place cookies one by one on to a metal rack to cool.
Makes 24 cookies (with a little extra batter...).
