Food Prep Funday


This A.M. I am eating clean. Instagram has been a huge source for my inspiration, not only for fashion,  art and photography but also for fitness, health and food.  I found out that a lot of people are preparing their meals ahead of time.  Usually preparing their meals in advance on Monday's, these health nuts are genius if you ask me. I thought I would give it a try and I experienced the benefits.  This cave man (a.k.a. Paleo) inspired menu, is surprisingly delicious.  

Prepping my meals for the week ahead also gave me no excuse to fall off the wagon.  Eating healthy gives you so much energy and I had so much extra time each day to use it up!
Below you will find my Egg Cup Recipe, Sweet Potatoes and tips on keeping the food fresh.

1/2 an Avacado, 2 egg cups and 3/4 cup of roasted sweet potatoes

Roasted Sweet Potatoes
How to Cut the Turkey


Egg Cup? or Egg Muffin?

Egg Muffins:
Ingredients
6 eggs
12 slices of turkey or ham
1 cup of your fave grated cheese
salsa
Salt and pepper to taste

These are so simple to make.  You basically prepare the eggs like you would an omlette. Cut sliced meat and place into the bottom of lined cupcake pan, spoon teaspoon of salsa ontop and then pour egg mixture into cups.  Bake at 350 degrees for 15-20 min or until cheese is bubbly and eggs are firm.

Roasted Sweet Potatoes:
2-3 med size sweet potatoes
sea salt black pepper
1 tsp smoked paprika
1/2 tsp tumeric
1/2 tsp chili powder
1 tbsp olive oil

Peel and dice potatoes into bite size pieces
mix all ingredients together and bake until golden (20-min)

Smoothie Prep: Kale , Mango, Raspberries, Banana, 1 scoop of protein powder, orange juice 




Tips on keeping food FRESH:

1) Store all leftovers in air tight containers and or freezer bags.
2) Use a plastic wrap that is strong and clingy, my faves are NONAME and ChicWrap.
3) Wash and prepare, herbs, veggies and even pasta ahead of time and store them in freezer bags.
