This A.M. the smell of bacon, eggs, smoked salmon, Montreal bagels and french roast coffee fills the air in what you might consider the typical kitchen. Perhaps this is what you would expect in any home across the continent, however, this particular kitchen has an above average cook. In fact this kitchen bears the fruit of a true artist...Demuir.
Under his label Mikita Skyy, Demuir has artistically crafted a range of music that fulfills a wealth of categories ranging anywhere from filtered funk to techno.
" ...Playing a wide range from Hip Hop, Jazz, Funk, and Disco. The house music bug caught him in the advent of techno, where he found the fusion of various forms of music molded into one. As a result, he began searching for new sounds, writing, and producing tracks to include musical influences he enjoyed playing. This developed a unique sound with a heavy dose of funk and rhythmic percussion to compliment his house appeal. His production style is also reflective of his musicianship playing keyboards, bass, congas, guitar, drums, and various percussive instruments".
Not only is Demuir skilled at writing, playing and producing music, he also has mastered a love of food and he showcases this love in the kitchen. His attention to detail, culinary knowledge and food industry experience drives his passion for food at almost a comparable level to that of his love for music.
Today I share with you two of my absolute favourite recipes, his Pistachio Crusted Chicken and Mac & Cheese Recipe.

Growing up, who influenced you in the kitchen in your family?
His father was his family's main contributor in the kitchen and source of inspiration and his mother was the baker.
What is your favourite meal you have prepared?
Lamb shoulder and shank.
What are you kitchen fears?
"being complacent, I don't want to plateau.."
What are some inspirations for your next recipe?
Using Scotch has always been something I would like to try.

A garlic press
|Demuir's Crispy Chicken with Pistachio Nuts|
|Demuir loves organic meat and fresh herbs|

Demuir's Pistachio Crusted Chicken
6-8 Organic Chicken legs
Trini style hot sauce
1/2 cup crushed pistachios
4 tblsp honey
3 cloves of garlic
2-3 sprigs of rosemary
pepper to taste
Season chicken overnight for best results or at minimum half an hour
Bake for 400 degrees for 20 min.
Reduce to 350-365 degrees and bake for another 60 minutes. Remove the chicken and let it rest for 10 minutes. Serve.
Demuir's Mac & Cheese
8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
1/2 cup grated Kraft Italian 4 cheese (mozzarella, emmeti, parmesan, provolone)
1 1/2 - 3 cups milk
1/4 cup butter
2 1/2 tablespoons all-purpose flour
2 tablespoons butter
1/2 cup bread crumbs
3 drops of truffle oil
Cook macaroni according to the package directions. Drain.
In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux.
Add milk to roux slowly, stirring constantly.
Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni.
Add 2 1/2 table spoons of butter. Stir well.
Pour 1 table spoon of olive oil and and truffle oil into a skillet at medium heat.
Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika (optional)
Bake at 350 degrees for 30 minutes. Serve.
